Vegan Raspberry & Coconut Cupcakes

Make: 12 cupcakes


What you need:

  • Your favourite Vegan Vanilla Cupcake Recipe

  • 1 cup Raspberry (Fresh/Frozen)

  • 400ml Chilled Coconut Cream

  • 1 cup of Icing Sugar

  • PINK MUESLI "Berries"



  1. Add the raspberry into your favourite vegan cupcake mixture to bake.

  2. Make sure cupcakes are cooled down before you start on making the coconut frosting.

  3. To make the coconut frosting, you have to chill the coconut cream in can(s) and your mixing bowl in the fridge a night before (overnight).

  4. Add 1 cups of sifted icing sugar into the chilled coconut cream in the mixing bowl, whip it at high speed until it firms.

  5. Pipe the coconut frosting on the cupcakes and sprinkle some Berries Pink Muesli to decorate.
